A TOP restaurant chef is hoping he has the right recipe to keep an historic windmill turning to help promote Anglesey tourism.

Richard Holt , 26, has purchased - for an undisclosed fee - the Melin Llynnon site, at Llanddeusant, formerly run as an Anglesey County Council visitor attraction.

Richard, who is from Talwrn, Anglesey, has worked at the two Michelin star restaurant 'Marcus,' and was head pastry chef at the AA three rosettes Gilbert Scott restaurant, both in London, run by TV chef Marcus Wareing. He also worked at Anglesey's Michelin starred Sosban and the Old Butchers at Menai Bridge.

The mill, which is on a four-and-a half-acre site, was originally built in 1777 and is the last working flour mill in Wales. It includes five listed buildings, and incorporates two recreatedlate Bronze Age, early Iron Age roundhouses.

The former Ysgol Gyfun Llangefni pupil, has "big plans" for the site. With the help of his Anglesey-based family, mum and dad, Pamela and Richard Holt, sister Katherine Holt and her partner Matthew Hildred, is hoping to recreate the site as a major hub for island residents and visitors.

Welsh speaker Richard says one of his first jobs is to change the spelling of the site to "Melin Llynon." He also plans to paint the windmill buildings and fences and is appealing for helpers.

Richard is planning to open the windmill to visitors all year round, and aims to open a tearoom style cafe in the coming weeks.

Keen guitarist Richard, also studied music at Cardiff University, is keen to bring musical events to the site.

"I have so many ambitious ideas and I am up for the challenge. I am happy to be back home on Anglesey and I am sothrilled my bid got accepted, there was a lot of competition," He said.

"I want to keep alive an important piece of Anglesey's history. and I want to make difference to boost Anglesey tourism.

"I have big plans. We'll still have tour guides, information and historical events, but I envisage it also being used for everything from festivals, to music groups, or by organisations such as the scouts. I am even learning how to mill flour which we will sell.

"I want to bring businesses in, such as local arts and crafts, as well providing jobs in the cafe. We also aim to redesign the existing cafe improving access for disabled people and make it dog friendly."
